PROFILE
He began his culinary career in 2008 as a kitchen assistant at Hyatt Regency Guam, later serving as Head Chef of the hotel’s Café Kitchen. While gaining extensive hands-on experience, he earned an Associate Degree in Culinary Arts from Guam Community College and completed an apprenticeship program in 2012. Since 2020, he has been the Executive Sous Chef at The Tsubaki Tower, dedicating himself to mentoring and developing young local chefs.
Philosophy
「My philosophy is to create memorable dishes using locally sourced, seasonal, and sustainable ingredients, turning each plate into a canvas of flavors. I focus on highlighting the natural taste of each ingredient while delivering a multi-sensory experience that leaves a lasting impression on our guests.
